With Halloween just five days away, my mind is already turning for the perfect dish to bring to Thanksgiving dinner. Each year, we have the family over to my parent's house. All of the Aunts and Uncles, and cousins. Its great to get together and catch up since we don't see each other much outside of holidays.
I usually try to bring something outside of the traditional dishes. For those of you who don't know me personally, not a lot about myself is traditional. And it isn't that I'm against tradition, I just like to keep things interesting! I'm not quite sure what I'll bring to contribute yet, but I think along with my side dish, I'd like to bring a Fall cookie as well. And this one might just fit the bill!
I found this Pumpkin Breakfast Cookie recipe over on Pinterest and knew I had to give it a shot! Ya'll….I don't even like pumpkin. But that fall inspired ingredient list and those fall smells just sucked me in!
Regina over at Leelalicious has perfected these cookies over the years, so all of you pumpkin lovers are going to want this recipe at an easy reach. Just don't skip out on any ingredients! I was out of coconut oil and tried to make a batch without it. Bad decision. Such a bad decision that I had to throw the entire batch away. Even Dane, who claims to eat anything, spit them back out!
I love how extremely easy these cookies are to make! The recipe instructions didn't specify mixing all dry ingredients together and then adding it to the bowl of mixed wet ingredients, so I added each ingredient into my KitchenAid Stand Mixer. Only one bowl to clean in the end! One bowl cookie recipe for the win! Woot woot!
After soaking in the smell for a good 15-20 minutes, I couldn't wait long enough for them to fully cool. I just had to give them a taste! For a girl not liking pumpkin, I have to say they really weren't that bad! They had a good taste, but I think I would've enjoyed them more if I actually liked pumpkin.
